In-house Coffee Roasting

EVERY MONDAY MORNING, OUR COFFEE BEANS ARE CAREFULLY ROASTED IN-HOUSE, PROVIDING FOR ALL THAT INCOMPARABLE SMELL OF FRESH COFFEE.

Our coffee comes from Chiapas in the Mexican Cordillera, where for more than 60 years coffee has been grown bio-dynamically (the same method used on the farm at L'AUBIER). Cultivated with great care at the Finca Irlanda cooperative, it has been certified Demeter quality since 1967!

Bio-dynamic agriculture promotes the healthy development of coffee bushes, resulting in a very aromatic coffee. The plantation is located on poor land but very fertile because of volcanic origin. After hand-harvesting, the coffee beans are washed and then dried in the sun, and finally also sorted by hand. This production sustains many families year round.

Fair trade has been the watchword since the beginning. In consequence, little by little, kindergartens, schools and clinics have been established that enable the indigenous population to receive healthcare and education. By its example, the Finca Irlanda foundation also aims to encourage good social practices in other businesses in the area.

The plantation is also the habitat of 8 species of endangered birds that the Finca’s founding family seeks to protect through its foundation.
